This is a quick and easy vegetarian-friendly recipe full of comforting carbs to keep your energy levels topped up when running between lecture halls.
Mozzarella Baked Tortellini
Ingredients:
- 2 x 300g packs of Cheese and Tomato Tortellini - £2
- 1L Tesco pure Vegetable Oil - £1.85
- Loose Onion - £0.12
- Redmere Farms Garlic 4 pack - £0.95
- Growers Harvest Tomato Passata 500g - £0.45
- 2 x 250g Tesco Baby Spinach - £1.15
- 30g Tesco Cut Basil - £0.52
- 340g Tesco Sliced Black Olives in Brine - £1.10
- 210g Creamfields Mozzarella - £0.69
- Tesco Sweet and Crunchy Salad - £0.83
Total - £11.17
Method:
- Preheat the grill of the oven to approx 220°c
- Bring a large pan of lightly salted water to the boil. Add the tortellini and cook for 3 mins, then drain and set aside. They will be slightly undercooked but will continue to cook under the grill
- Meanwhile, heat 1 tbsp vegetable oil in a large, lidded frying pan. Add the onion and fry for 5 mins until starting to soften, then add the garlic and cook for 1 min. Add the passata, cover the pan with a lid, reduce the heat to medium and simmer for 10 mins. Stir through the spinach and cook for another 1-2 mins until wilted. Stir through most of the basil and add the tortellini and olives to the sauce. Remove the pan from the heat
- Pour the tortellini mixture into a baking dish and scatter with the torn mozzarella. Place under the grill for 3-5 mins until golden and bubbling. Scatter over the remaining basil
- Serve the tortellini bake with the salad on the side
